Triple Berry Fluff Salad

I love barbeques and pot lucks that seem to happen most often during the summer months. With Memorial Day right around the corner, I wanted to share a new favorite “fruit salad” that is always a huge hit. I took it to a large family function with my husband’s family and no one could figure out what it was made of, but they all wanted more. The kids were calling it
“Aunt Jen’s deliciousness.”

I got the recipe from a friend of mine and I think I could probably eat the giant amount that this makes all by myself. I haven’t personally tried substituting a healthier yogurt, free cool whip, and sugar free pudding mix, but if that’s something you’d like to try it probably would taste great too. Let me know if you try out a “healthier” version.

1. Start by pouring in 32 oz. of vanilla yogurt into a bowl. Sprinkle 2 boxes of vanilla pudding mix on top.

2. Stir that up to combine. Don’t worry, the yellowness will go away as you add in your cool whip. It will be a little lumpy, but that is perfectly fine.

3. Then fold in 16 oz. of thawed cool whip. It takes a little bit of effort to gently fold it in, but it’s well worth it.

4. Pour in 2-16 oz. bags of frozen mixed berries. I don’t like to thaw them first. I really like the extra crunch you get from frozen fruit. As the fruit thaws, they will also bleed their beautiful colors and make your “fruit salad” even more beautiful. This does keep well and leftovers are just as delicious as the first day. Enjoy!!

  • This was so good! Isla was absolutely crazy for it. I think next time I make it I may substitute cheesecake pudding for the vanilla to see how it works.

    • I had thought about making it with cheesecake pudding too! But John doesn’t like cheesecake…. How this is possible, I don’t know. :)
