I have just discovered sweet potatoes. I know I am a little late. But these things are GOOD! Then when I found out you could make a sweet potato fry, I was knew I was in for a treat. So for the first time in 24 years I made a sweet potato fries. I adapted this recipe from a recipe I found onĀ Mel’s Kitchen Cafe and I really enjoyed it. The sweet and savory flavors combine quite nicely and every one at the table went back for seconds. That is a home run in my opinion.

3 large sweet potatoes or yams
2 T. olive oil
1 T. sugar
1 t. salt
1 t. chili powder
1 t. cumin
1 t. dried oregano

Peel and cut sweet potatoes into a uniform fries. Put the cut sweet potatoes into a large baggie. Add olive oil and shake the fries around until they are evenly coated. The original recipe called for three, but I stuck with two and it was plenty. Then add the rest of the ingredients and shake it all up again until the fries are evenly coated with the spices.

Heat the oven to 425. You can try preheating your pan and when you place your fries on the pan, they will sizzle and add extra crispiness. Bake for 15 minutes and serve. (Serves 4-6 adults.)
