I love homemade jam. Nothing that you can buy in the store can compare. While jam that you process in a hot water bath lasts a little longer and has a thicker consistency, it is also kind of a pain to make. Freezer jam, however, is very easy to make. It literally takes about 35 minutes and you are done. This recipe has been a huuuuuuge hit to with my neighbors and friends that have received it as a gift from me. They all beg for the recipe and refills in their jars.
Here are the ingredients: strawberries, corn syrup, lemon juice, pectin, and sugar. That’s it! I have been told the purpose of the corn syrup is to prevent ice crystals from forming in the freezer.
Wash and cut your strawberries. Place them in a large microwave-safe bowl. It is easier if you take the time to cut them into smaller pieces. Mash the strawberries. I have used a potato masher as well as a blender. Either one seems to work just fine.
Add in lemon juice. Stir. Sprinkle in pectin about 1/3 of the package at a time. Stir well after each addition. Let this sit for 30 minutes at room temperature.
Add in corn syrup. Mix in sugar 1 cup at a time, stirring very well.
Microwave for 5-6 minutes or until bubbles form around the edges.
Pour into your jars or containers. I usually get about 9 c. of jam from this recipe.
You can store this in your freezer for up to a year. Enjoy!
