I love salami. I love pasta. I love red onions. I love provolone cheese. Everything I love is pretty much all in this delicious pasta salad. This is a recipe from a family friend and any time I take it anywhere, I am always, always, always asked for the recipe. It is a little more “manly” than your average pasta salad, but is still very suitable for a female audience as well.
Salami Pasta Salad
Ingredients
- 1/2 lb. farfalle pasta
- 1/3 lb. genola salami
- 1/4 lb. provolone
- 1/2 c. diced red onion
- 1/4 c. pepperoncini
- 1/3 c. oil
- 1/4 c. vinegar
- 1 1/2 t. salt
- 1 1/2 t. oregano
Instructions
- Cook, rinse, and drain pasta.
- Chop salami, provolone, red onion, and peperoncini, then mix with pasta.
- Pour oil, vinegar, salt, and oregano into a small bowl. Mix and then drizzle over the pasta mixture.
- Tastes best when it has some time to "marinate", so it's best if you make it in the morning to eat later that day, or let it sit overnight.
