Quick Ham & Bean Soup

Again, I totally have a cold (or “cold”) weather soup issue. The issue being that I can eat soup all of the time. Which maybe isn’t an issue for me, but it is nice to get some variety in the soups for my family. One canned soup that I really enjoy is bean and ham soup, but really, while canned soups are convenient, they often either have a nice preservative taste or are skimpy with the hearty ingredients. This soup is slightly adapted from Taste of Home and is a perfect blend of convenience (using canned beans – no need to soak & cook) and homemade taste. One of my favorite parts of this soup is the chili powder. It is not overwhelming, but gives it some fun personality. This one is definitely a winner!

Quick Ham & Bean Soup
  • 2 medium carrots, sliced
  • 2 celery ribs, chopped
  • ½ cup chopped onion
  • 2 tablespoons butter
  • 4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
  • 4 cups chicken broth
  • 1 cup water
  • 2 cups cubed fully cooked ham
  • 1 teaspoon chili powder
  • ½ teaspoon minced garlic
  • ¼ teaspoon pepper
  • 1 bay leaf
  1. In a large pot, melt the butter and saute the carrots, celery & onion until tender.
  2. Add the remaining ingredients and bring to a boil.
  3. Reduce heat and cook for 15 minutes or until heated through. Discard bay leaf and serve.
