I will have to admit. I have not eaten anything with pumpkin this fall until this past week. I think it all started with a Pinterest explosion of pumpkin goods – I got “pumpkin-ed” out. Finally, FINALLY I decided that I was ready to have some pumpkin. And I needed a cookie. And chocolate. So I searched my pins and could not find a pumpkin chocolate chip cookie. I looked at several different recipes online and finally found this one from Shockingly Delicious that looked like an awesome cookie. I have seriously made four batches in a three-day period. They were THAT good. They have the perfect amount of spice and fluffiness to the cookie, and the chocolate puts it over the top.
Pumpkin Chocolate Chip Cookies
- 1 c. sugar
- 1 c. shortening
- 1 egg
- 1 c. pumpkin puree (canned pumpkin is fine) (**see note at bottom)
- 1 tsp. vanilla
- 2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 2 c. chocolate chips (more or less to taste)
1. Preheat oven to 350 degrees.2. Mix all ingredients (seriously, how easy is that?). Scoop onto baking sheet.
3. Bake for 9-11 minutes. I ended up baking them more like 11-12 minutes. I even left a couple of batches in a little longer than that by accident and they still ended up great.
**Note: If you double the recipe (which is what I did….twice…..), you can use a whole can of pumpkin at once. Easy peasy.
