Here in Idaho, people grow a lot of Zucchini in the summer and they are always giving it away. So why grow so much? I don’t really get it and I don’t really like Zucchini either, but when someone unloads their Zucchini on me, I make Zucchini bread!
I found this recipe in an LDS Living magazine and I really like the extra flavor that the orange adds and the bread turns out really moist too!
Ingredients
4 eggs, beaten
1 1/2 cups sugar
3/4 cup oil
2/3 cup orange juice
2 teaspoons orange zest (more never hurts if you want more flavor!)
2 cups grated Zucchini
3 1/4 cups flour
1 1/2 teaspoons salt
1 1/2 teaspoons baking soda
1 teaspoon salt
2 1/2 teaspoons cinnamon
1/2 teaspoon cloves
1/2 cup chopped nuts (optional)
Glaze
1 cup powdered sugar
2-3 tablespoons orange juice
Instructions
Beat eggs. Add sugar, oil, juice, zest and zucchini. Mix well. Combine dry ingredients and add to the wet ingredients. Mix well. Place in two greased 8 x 4 inch loaf pans and bake at 350 for 45 minutes. You can also use four 3 x 5 1/2 inch loaf pans and bake for 40 minutes. Make the glaze and drizzle over the bread when cool.
