With “Pi” Day coming up (March 14……3.14…..get it?), we thought we would celebrate here at Egg Rolls & Sauce with some of our favorite PIES. Because pies are a good idea any time of the year, but even more so when you have a whole day to celebrate them. 🙂
This is one of our favorite pies. It is light and refreshing, and very delicious. Lemonade and ice cream together….who can turn that down? It is the perfect blend of the tartness from the lemon flavor and sweet. I found it in a Kraft Foods magazine several years ago, and it is the perfect thing to make to celebrate Pie (oops – I mean “Pi”) Day. 🙂
Ingredients:
- 1/2 c. cold water
- 1/3 c. lemonade flavored drink mix (the pre-sweetened powder kind – think “Country Time” or similar)
- 2 c. vanilla ice cream, softened
- 1 8 oz. tub whipped topping, thawed
- 1 graham cracker pie crust (buy one, or use the recipe below)
Step 1: Add water and drink mix into bowl. Stir until drink mix is dissolved.
Step 2: Add ice cream and beat with mixer until well blended. I usually will just make it with ice cream just after I have brought it home from the store – that seems to be about the perfect consistency. Not too firm, but not too melted.
Step 3: Stir in the whipped topping. The original recipe says to “whisk”, but I still “blend with mixer”. Looks pretty much the same as above, just fluffier (and more of it – yum!).
Step 4: Stick in freezer for 4 hours, or until firm. When you are ready to serve, let it sit out for a few minutes and it should be easy to cut.
There you go! Super easy, pretty much fail proof – my kinda pie. Happy Pi Day!
And here is the crust recipe for those who may be interested. I found it at allrecipes.com and modified it just slightly. That site is wonderful. And so is this crust. It is a little thicker (at least how mine turned out) than the store-bought ones, and it doesn’t crumble as easily. Baking the crust beforehand is the trick there, so don’t skip that step.
Ingredients:
- 1-1/2 c. finely ground graham cracker crumbs (if you are self-grinding, this is a little over a “sleeve” of graham crackers)
- 1/3 c. sugar
- 6 T. butter, melted
Step 1: Mix your ingredients until well-blended. Press mixture in an 8 or 9 inch pie plate.
Step 2: Bake at 375 degrees for 7 minutes. Allow to cool.
That is it! Again, super easy.
Here is a graham cracker crushing tip as well: take your graham crackers out of the plastic and put them in a gallon-sized zipper bag. Crush the crackers up a bit with your hands, and then take a rolling pin and roll it over the bag, flipping it over as needed and repeating on the other side until you have your finely ground crumbs.
