Cilantro Lime Rice

Serves: 2 cups
  • 1 cup Basmati Rice
  • 2 cup Water
  • 1 tbsp Vegetable Oil
  • 1 Bay Leaf
  • 2 tsp finely chopped Cilantro
  • 2 tbsp of Lime Juice
  • ½ tsp Kosher Salt
  1. Rinse rice in a colander until water runs clear.
  2. Saute rice in oil for 3 minutes over medium heat, or until rice becomes puffy.
  3. Add water and bay leaf and bring to a boil. Once the water has boiled, reduce the heat and simmer until all the water is absorbed.
  4. Meanwhile, mix salt and lime juice together and chop up the cilantro.
  5. Once the water is absorbed, remove the bay leaf and stir in the lime juice and salt mixture and cilantro.
