I have had all sorts of store bought and home made granola, but this granola recipe trumps them all, seriously. This recipe actually was handed down from Kat to our sister in law, who gave it to our mother in law, who gave it to me! Isn’t family recipe sharing wonderful? Just like playing telephone, I think a few things have been changed and switched in the passing on of the recipe, but I love what I’ve ended up with and certainly see whole a lot more of this in my future.

Mix the following ingredients in a large bowl and then set aside.
6 c. regular oats
1 c. coconut
1/2 c. flax seed
1 c. raisins
1/2 c. brown sugar
1/2 c. almonds

Next, in a small pot combine:
3/4 c. honey
1/2 c. oil
1/2 t. salt
1 t. cinnamon
Bring to a simmer until sugar dissolves. Add 2 TBS vanilla. Pour over dry ingredients and mix well until all the ingredients are wet. Spread over two cookie sheets (no need to grease them)! Cook for about 15 minutes at 350, and stir the granola half way through the baking time. If you like your granola more crispy, leave it in for about 18 minutes.Parfaits, anyone?!
