This recipe is a WINNER. Chocolate is wonderful. So is peanut butter. But together? That is my favorite. These are easy, and it’s easy to pretend like they are healthy because they call for 2 cups of oats (ignore the cup of margarine….and the 2 cups of sugars…….). I got this recipe from a cookbook that some friends put together, and it is SO good.

Chocolate Peanut Butter Bars

  • 1 c. margarine
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 eggs
  • 1/3 c. peanut butter
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. oats
  • 2 c. flour
  • 2 c. chocolate chips

Glaze

  • 1 c. powdered sugar
  • 1/4 c. peanut butter
  • 1 Tbsp. milk

1. Preheat oven to 350 degrees. Cream margarine, brown sugar, eggs, peanut butter, baking soda and salt. Mix until smooth.

Then add oats and flour.

2. Spread batter into 9×13 baking dish. Bake for 20 to 25 minutes. (I seem to need to bake it a little longer, so be aware that it may take a little longer if you are planning time to prepare it.)

3. Remove from oven and sprinkle with chocolate chips (yum!). Allow chocolate chips to melt.

In the meantime……

4. Prepare your glaze. I would start with a little LESS than the tablespoon of milk, and then add a little bit at a time until you get something that is smooth to work with. This makes a LOT of glaze, so you may not need it all depending on how much you like a yummy peanut butter glaze.

5. Spread out melted chocolate on top of the cookies, and drizzle your glaze on top. You could either spoon the glaze over the top (if you are like me), or you could put it into a plastic baggie, snip a small piece of the corner off, and go to town squeezing the drizzle in a neat way…….which I obviously did NOT do. :)

There you go! A yummy treat to bring to a friend, or to enjoy on your own (while you pretend that all the oats actually make it “healthy”…….).
