I love Mexican-inspired food. This is a recipe that I grew up with. I think my mom got it from an old friend and I literally crave this. I would eat it all the time if I could. I will say that it is not the healthiest dish, but it is fast, easy, and delicious.

Chicken Enchilada Bake:

4 chicken breasts (cooked and chopped)

2-3 c. shredded cheddar cheese

1 can cream of chicken soup

1 10oz. can enchilada sauce

1 c. chicken broth

1 small can chopped green chiles (optional, but highly recommended)

1 small can chopped olives

1 11-oz. bag Fritos scoops

Sour cream (to top)

Mix together soup, olives, enchilada sauce, green chiles, and broth. Layer as follows in a 9×13 pan: ┬áchicken, chips, cheese, sauce, chicken, chips, sauce, cheese.

Bake at 350 for 45 minutes. Top with sour cream, if desired.
